Mojama yellowfin tuna is a true delicacy from Andalucia. The tuna is cured by packing fresh loins in sea salt; later, they will be rinsed and hung to dry until they are completely cured and darker in color. When sliced very thinly, drizzled with olive oil and served with a glass of crisp white wine, mojama is a real treat. In Spain, mojama is either drizzled with olive oil and served with bread or cut finely and used as a flavor enhancer in soups, salads, and broth.
