Our most highly acclaimed item at the moment is the ventresca of bonito. This product is extremelly limited especially since Ormaza is no longer in business. Their production plant is being remodeled into a museum of "conservas" in the Basque Country.
Bonito is one of the most prized fish and most commercialized product from the Basque Country. They are the experts in working with and preserving this wonderful product. We now carry bonito produced by Batel that is very exquisite.
The meat from this fish has a very unique color, flavor and texture. The fish are caught individually by rod and not by net. The meat is moist, soft in texture and white with a pinkish tone- It is never dark. Unfortunately, there are many producers that commercialize the bonito blanco name when it truly is not. Bonito is limited and not available in great quantities.
