Saffron from La Mancha-exquisite aroma with a soft color. Each saffron flower has three stigmas. At every harvest each of these stigma are plucked from the flower and packed to be sold as saffron threads. Imagine how many flowers need to be selected in order to accumulate 1 ounce of saffron. You can tell saffron filaments are high quality when the threads are mostly red. Minimal traces of yellow should be seen on the stigma.

The price of saffron has skyrocketed in the last two years. The harvests have been negatively affected by inclement weather and those that labor with the flowers are charging a much higher price to compensate for the arduous manual labor involved.

You must be cautious of finding low prices for saffron on the market. This is usually adulturated product. Once you put this low cost saffron in broth or water- a bright yellow orange color taints the water, the aroma is minimal and is lost within 5 minutes and you are left with white expanded vegetable threads- (not saffron). Why would you be paying saffron thread cost for food coloring and a couple of traces of real saffron?

A little bit of real saffron will go a long way in your cooking adding unsurpased lasting aroma. Remember saffron is not intended to be used to add color to your rice or broth dishes but rather aroma. The pale soft yellow color that the threads loosen is natural and very mild.
