These are the most luxurious of our selections. These thick loins with the skin on are excellent for recipes with oven baked preparations.  Unless you are cooking for a big party at home our suggestion is to portion out the loins once you receive them and pack them separately so you can maintain them in the freezer and thaw only the loins you will be using.

When cooking this delicacy TEMPERATURE control is the key factor.  Internal temperature of Bacalao Giraldo should never exceed 140˚ F.  Excessive exposure to heat will destroy the natural nutritious gelatin in this product.

 

If recipes call for frying or oven heating at a high temperature minimize cooking time.
