Because it is produced in a totally artisanal manner every Cabrales is different. Some have more blue veining than others. Some are stronger in flavor as well. Every piece has its own defined characteristics. Authentic Cabrales cheese is always wrapped in foil. Origin: Asturias Tasting Notes: This cheese has an intense aroma when ripe. It crumbles when sliced thinly and melts in the mouth rendering a blend of complex flavors of earthy tones, a right amount of saltiness and piquant finishing touches.
