Nevat

Made with pasteurized goat's milk and aged for 1 month. This cheese is multifaceted. Because of it's particular characteristics Nevat is a delicate and highly perishable cheese. The rind is covered with a bloomy white mold that keeps on breathing and infiltrating the cheese as it ages. This mold has a short life span and dies quickly as it consumes the cheese from the exterior to the inside. If it smells of ammonia, has pink mold on the outside and is liquified this cheese is no longer alive and should be discarded.

Origin: Cataluña

Tasting Notes: Every section of Nevat tastes a bit differently. This cheese has a pungent odor and a very bright white interior. The sections near to the exterior are a bit softer and quite creamy. Closer to the interior the cheese is a bit crumbly and soft. It has a delicate sweet flavor with a slight tangy finish.
