Casin (Cow) One of the oldest cheeses of Spain Casin Raw Milk - Made with raw Casina cow's milk by means of lactic coagulation. This cheese is of limited product and elaborated by a mother and daughter team. It is one of the oldest cheeses of Spain and we have them to thank for preserving this tradition. They own a beautiful bed and breakfast located inside a protected natural park of Asturias. The milk is obtained from several of the Casina cows that live on the family property. The cheese is elaborated in an area located inside the bed and breakfast. Hotel guests have the option to observe through the pristine glass walls to see how Casin cheese is produced. It is definitely a place to visit if ever in that region of Spain. The cheese mass is kneaded twice during the curing process of 3 months. Opposed to other cheeses it is hand molded before being pressed with the family seal to be prepared for sale. It is trully one of the most artisanal cheeses we import from Spain.
