Los Beyos (Cow) Los Beyos Made with pasteurized cow's milk and aged for 2 months. Los Beyos is truly an artisanal beauty elaborated in the mountains of Amieva. It takes its name from "el desfiladero de los Beyos"- a beautiful but extremely narrow swirvey mountainous route in Asturias that follows through to Castilla-Leon (there's always a debate as to which area is really where this cheese originated). One thing is for sure Cata in Asturias has really done a great job of preserving and promoting this excellent cheese for export. There are several versions of Los Beyos some of which are made with goats milk, but are not found year round. We have selected this pasteurized cow's milk version because it is much more readily available for export. We will have the other seasonal versions- so give us a call to ask us about it. Origin: Asturias Tasting Notes: Los Beyos is not easily cut in wedges because it is flaky. It is very creamy and literally melts in your mouth. This is one of the characteristics of this cheese that makes it so unique and likeable. Its flavors are mild but very lactic that leave a slight chalky texture in the mouth.
