Afuega l' Pitu Morcin Red

Made by means of acid coagulation of pasteurized cow's milk and aged for 1 month. Our favorite brand is Temia commercialized by Cata. It is made in a small farmhouse that has won many prizes for the quality of afuega l' pitu that they make. In Asturian "Bable" Afuega l' Pitu is roughly translated as "Chokes the throat". This cheese is originally in a yogurt like paste that is mixed with paprika and then wrapped in a cloth and left to cure for a month. During this time the lactic acid seeps through the cloth and the cheese takes its artisanal cloth like form.

Origin: Asturias

Tasting Notes: This brand of afuega is granular with an intense acid lactic flavor that dominates the palate. It melts in your mouth with a persistent aftertaste. Morcin red because of the paprika preserves longer and is slightly spicy in flavor. If you like this cheese you may also enjoy afuega l' pitu white- without the paprika spicy flavor.
