Made with pasteurized cow's milk and aged for 2 months. It is caramel colored in its exterior and shaped like a breast similar to Tetilla. San Simon is smoked during its curing process.

 

Origin: Galicia

Tasting Notes: This cheese is much firmer in texture and slightly elastic. You will find a persistent smoky aroma and flavor that lingers in your mouth.
