Made with raw Manchega sheep’s milk and aged for 4 months. This is the most artisanal of our Manchego selections and our strongest in aromas and accentuated flavors due to the raw milk.

Origin: Castilla- La Mancha

Tasting Notes: The smell of this cheese transports you to a farmhouse. The texture is slightly elastic and its dense interior has small eyes. The taste of sheep milk fills your palate and a perfect balance of slightly piquant and nutty notes complete the finish. A true delight!
