Made with whole pasteurized Manchega sheep’s milk and aged for 3 months. Some prefer mini versions of Manchego since they find flavors are a bit more accentuated in these pieces of 2.15 lbs as opposed to the whole wheels of regular size Manchegos that weigh approximately 6.5 lbs.

Origin: Castilla- La Mancha

Tasting Notes: Semi soft cheese with a characteristic sheep flavor. This cheese is slightly acid and salty and leaves a nutty finish on the palate.
