Valdeon Baby (Cow, Goat) Valdeon Made with pasteurized cow and goat's milk. Tomas and his family have been making this cheese for many years in the valley of Posada de Valdeon. You have most likely been served this cheese at a restaurant or a retail establishment and have been told it is Cabrales. Each of these blue cheeses is different and valued for their particular atributes. The blue veining in Queso de Valdeon is always consistent because it is inoculated with the penicilium mold before it is placed in the curing caves. Valdeon Cheese is also always wrapped in sycamore leaves and is creamier in texture and flavor. Origin: Castilla-Leon Tasting Notes: Valdeon has a pungent aroma but is milder and more accepting in palates that do not enjoy very strong blues. Its success in the American market has been precisely this fact. Valdeon is not aggressive and has a perfect balance of flavors. It is slightly piquant, creamy and oily on the palate. Great to be accompanied with sweet flavors. Spread some of this Valdeon cheese on a piece of toast and drizzle a bit of honey over it.
