Made with raw Lacha Sheep's milk and cured for 3 months. This special selection of Idiazabal is made in an artisanal fashion and is not smoked so you get the purest flavor of a true Idiazabal. Made by "Pastores" in Arantzazu, Basque Country, this is the best Idiazabal that we have tried. We import it in limited quantities so there may be times when we are out of stock.

Tasting Notes: This is a full flavored cheese. It has a perfect balance of salt and piquant flavors that lare slightly unctuous and a bit grainy due to the curing process. You can accompany this cheese with dry fruits, apples, or honey and nuts.
