Iberico (Cow, Goat, Sheep)

Iberico Row Milk

Made with mixed pasteurized cow, goat, and sheep's milk. It is a cheese with a compact interior. It is often mistakenly served as Manchego- but can be easily recognized because it does not have eyes in its interior and is whiter and not yellowish as is Manchego. Iberico is produced in many places in Spain.

Origin: Castilla - La Mancha

Tasting Notes: This cheese is milder in flavor and softer in texture. It as a well liked by those that search for younger cheeses that do not have strong aromas and are creamier.
