Iberico (Cow, Goat, Sheep) Iberico Raw Milk Made with mixed unpasteurized cow, goat, and sheep's milk. It is a cheese with a compact interior. It is often mistakenly served as Manchego- but can be easily recognized because it does not have many eyes in its interior and is whiter and not yellowish as is Manchego. This artisan iberico is much sharper and drier than our regular pasteurized mixed milk variety.
