Angulas Delfa Yes, these are the real thing-Angulas (Elvers). These plump angulas have a grey back, and are not thin and dry like most you find canned on the market. These have a soft mild flavor and are not fishy at all. Serving suggestion: 1 person (bountiful 100 grams) (2 persons) 50 gram portions are also acceptable these days Immerse this package in tepid water for 10 minutes. Open the package, remove the elvers and salt them very lightly. Put them aside while you prepare the rest of the ingredients. Slice 1 clove of garlic very thinly and separate 2 whole dry guindilla peppers for later use. Pour olive oil in a 14 cm round cazuela (enough to cover the bottom of the casserole and to have a bit of oil left over to dip bread in). Once the olive oil is hot, add 4 of the thin slices of garlic and the whole dry guindilla peppers. Once the garlic turns lightly brown add the elvers. Turn down the heat to a simmer. Stir the elvers for 1 minute to combine the ingredients. Turn off the heat and cover the casserole. Serve immediately and enjoy. Dip bread in the olive oil juice remaining in the casserole. It tastes great! 100gr $170.00 Serves 1-2 people
