Yes, these are the real thing-Angulas (Elvers).
We are the few if not the only company in New York that imports these expensive babies in a vacuum sealed container. We also have some canned, but we must confess they are not as good- but they are less costly. It all depends on how you are going to use them so we offer them as well.
We import this frozen delicacy from Northern Spain. They are ultra frozen and packed in 100 gram vacuum sealed packages. These plump angulas have a grey back, and are not thin and dry like most you find canned on the market. These have a soft mild flavor and are not fishy at all.
Mature eels migrate from fresh water rivers to the sea to spawn. Their larvae then slowly travel back to their rivers of origin and in transit transform into elvers. Fishermen catch them at night, so imagine how difficult it is to do this. Because they are so rare to find and are such a prized catch (specifically for the Japanese market) these Angulas are very expensive.
Gone are the days when you saw tortillas made with Angulas. If you don't want to pay this price we have also added surimi based elvers in this category. These are ideal for adding to fish dishes. We also import canned angulas, although they are not as high quality as our frozen ones, they are more economical.
We also sell the clay casseroles (cazuelas), dry guindilla peppers, and the wooden forks to prepare and serve angulas.
